Peanut Butter Bars

Just a classic recipe good to have on hand

Cookie Ingredients
  • 1 1/2 cups butter
  • 1 1/2 cups brown sugar
  • 1 1/2 cups white sugar
  • 1 teaspoon vanilla
  • 4 eggs
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 1/2 cups peanut butter
  • 3 cups flour (whole wheat works well)
  • 3 cups rolled oats (regular or quick)
Frosting Ingredients
  • 1 cup butter
  • 2/3 cup cocoa
  • 5 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/2 cup milk
Cookie Instructions
  1. Preheat oven to 350 degrees.
  2. Cream butter and sugars. Add vanilla, eggs, salt, baking soda, and peanut butter.
  3. Add flour and oats.
  4. Spread in 1 ungreased cookie sheet (jelly roll size) and 1 9x13 pan, or in 3 9x13 pans. Bake 20 minutes; let cool completely.
Frosting Instructions
  1. Melt butter. Add cocoa and powdered sugar.
  2. Add vanilla and milk. Add more powdered sugar or milk if necessary.

Tuna Noodle Casserole

TUNA NOODLE CASSEROLE
1 can tuna (7 1/2 oz)
1 can cream of chicken soup
1 cup frozen peas
3 cups noodles, cooked
1/2 teaspoon salt
1/2 cup milk
Flake tuna in casserole dish. Add soup to tuna. Add noodles, salt, and peas. Stir all together.Bake 30 minutes at 350 degrees.

Tuna Ring

TUNA RING 
1 egg, slightly beaten
2 (7 oz.) cans tuna
1/2 c. chopped onion
1/2 c. shredded sharp Cheddar cheese
1/2 c. chopped parsley
1 1/2 spoons celery salt
1/4 tsp. pepper
BISCUIT DOUGH:
2 c. flour (self-rising or biscuit flour)
1/4 c. shortening
3/4 c. milk
Heat oven at 350 degrees. Reserve 2 tablespoons of the egg; set aside. Mix remaining egg, tuna (drained), onion, cheese, parsley, celery salt, and pepper. Prepare biscuit dough. Roll dough into rectangle, 15 x 10 inch. Spread tuna mixture. Roll up beginning at wide side. Place, seam side down, in ring on greased baking sheet. Pinch ends together. With scissors, make cuts 2/3 of the way through ring at 1 inch intervals. Brush with reserved egg. Bake 25 to 30 minutes. Serve with cheese sauce.
 
CHEESE SAUCE:
1/4 c. butter
1/4 c. Bisquick
1/4 tsp. salt
1/4 tsp. pepper
2 c. milk
1 c. shredded cheddar cheese
Melt butter. Blend in Bisquick, salt and pepper. Cook over low heat, stirring until smooth and bubbly. Remove from heat; stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted.
 
 
You can substitute milk for buttermilk or use Bisquick for the Biscuit Dough. There are several different cheese sauces as well.

Chicken Tortilla Chip Casserole

This recipe is very versatile. If you don’t have pinto beans, use kidney or black beans instead. I’m a big fan of using what you have on hand. If your family likes more or less flavor, adjust spices accordingly!
Chicken Tortilla Chip Casserole
1 can diced tomatoes
about 1 cup diced cooked chicken
1 small can green chilies
1 can beans- pinto, kidney, black- whatever you have
1 can cream of chicken soup
1/4 cup sour cream
3/4 cup milk
1 1/2 cups crushed tortilla chips
1/2 cup shredded cheese
1/2 tsp Cumin
1/2 tsp taco seasoning
salt to taste
Directions:

Drain most of the liquid from the tomatoes and pour in an 9×13 baking dish. Sprinkle tomatoes with seasonings. Drain and rinse black beans and spread over tomatoes.
Crush chips and layer over the black beans.

Combine all liquids and mix thoroughly. Pour over the chips. Bake at 350 for about 25 minutes. Spread cheese on top and let melt in the oven for an additional 2-3 minutes.

Sprinkle a few cilantro leaves on top for added flavor!

Chili Spaghetti

1 qt hot water
2 lbs hamburger
1 12 oz can tomato paste
1/2 onion chopped
1-3 TBS chili powder
3 bay leaves
1 TBS salt
1 tsp pepper
1tsp allspice
1 tsp vinegar
1/2 tsp cumin
1/2 tsp worcestshire sauce
1/4 tsp cayenne pepper
1/4 tsp garlic

Simmer ingredients. The longer you simmer, the spicier it can get. Don't eat the bay leaves!
If you make this exactly according to the ingredients it is REALLY REALLY spicy so adjust according to your likes. This amount could also serve a whole family

top the spaghetti and sauce with sour cream and cheese, any kind you like!

Au Jus

Simply dinner idea, not really a recipe. We get the good bread hoggies, fresh from the bakery at the grocery store. I buy the hillshire roast beef when it goes on sale for a dollar, but you can use any thin roast beef.

I take one packet of Au Jus gravy sauce and make according to directions (though I usually only make half). To that, I add a large onion, sliced thin, and the roast beef. I take my rolls and cut them in half, butter them, and add slices of Swiss, then broil them in the oven open till they are lighlty toasted and the cheese melted. I then use tongs to get out the roast beef and onions and add to the sandwich. Then I take the extra sauce for dipping.
Great with a side of sweet potatoe fries and corn on the cobb.
